Un haut lieu de cette gastronomie africaine qu&rsquo;on ne valorise \u00a0pas assez dans nos campagnes de promotion touristique.<\/p>\n<p><!--more-->Mon compagnon et moi, habitu\u00e9s des randonn\u00e9es hors piste, voulions donc, un lieu sp\u00e9cial qui c\u00e9l\u00e9br\u00e2t les mets africains et nous sort\u00eet des recettes italiennes et fran\u00e7aises qu&rsquo;on propose dans les palaces et les h\u00f4tels 5 \u00e9toiles aux tarifs (68 dollars pour un buffet au Kimpinsky Grand Fleuve) inflationnistes et hors de port\u00e9e de la classe moyenne.<\/p>\n<div>\n<div><\/div>\n<div><\/div>\n<div>Nous voil\u00e0 donc dans le quartier Bon-March\u00e9, en plein coeur de Kinshasa by night, apr\u00e8s avoir affront\u00e9 le transport, les Esprits de Mort (vieux minibus \u00e9quivalents aux cars rapides de Dakar) et les ruelles plein de vie. Tout le monde conna\u00eet chez Flore.<\/div>\n<div><\/div>\n<div><\/div>\n<div>\u00a0Les portiers ouvrent la porte \u00e0 deux battants et la referme aussit\u00f4t derri\u00e8re nous. Nous f\u00eemes coup\u00e9s du bruit de dehors comme par enchantement. Place \u00e0 un d\u00e9cors authentique des tables et chaises en plastique, une simplicit\u00e9 insouciante et propre dans un silence contrastant avec les d\u00e9cibels de rumba qui font tr\u00e9mousser la faune nocturne du dehors.<\/div>\n<div><\/div>\n<div>L&rsquo;accueil est sommaire.Le service est alerte. Tout habill\u00e9 en blanc et noir, le personnel apporte la carte r\u00e9solument tropicale et guide les novices \u00e0 se rep\u00e9rer entre les nombreux choix qui se pr\u00e9sentent, allant du poulet au crocodile en passant par la torture, La silure, le capitaine ou l&rsquo;in\u00e9vitable ch\u00e8vre.<\/div>\n<div>En attendant que la marmite mijote, l&rsquo;on\u00a0sert les \u00a0boissons avec cette r\u00e9serve qui fait les grandes adresses.<\/div>\n<div>Mon vis-\u00e0-vis avait opt\u00e9 pour \u00a0le fameux \u00ab\u00a0Igomb\u00e9\u00a0\u00bb, \u00a0cette sp\u00e9cialit\u00e9 de l&rsquo;Afrique centrale qui consiste \u00e0 faire mijoter du poisson ou viande dans des feuilles de manioc. J&rsquo;optai pour le poulet brais\u00e9 \u00e0 la congolaise. Comme garniture, banane plantain et riz \u00e0 volont\u00e9. Une sauce de manioc agr\u00e9ment\u00e9e de poisson s\u00e9ch\u00e9e \u00e9tait offerte gracieusement par la maison.<\/div>\n<div><\/div>\n<div>Appr\u00e9ciation :<\/div>\n<div><\/div>\n<div>La silure de l&rsquo;Igomb\u00e8 en portion XXL \u00e9tait tendre et d\u00e9licieuse. En revanche la banane plantain \u00e9tait un tantinet sec donnant l&rsquo;impression d&rsquo;avoir s\u00e9journ\u00e9 plus que de normal dans le garde-manger. La feuille de manioc est excellente de mon point de vue. Mon compagnon qui en avait us\u00e9 dans l&rsquo;enfance est nuanc\u00e9.<\/div>\n<div>L&rsquo;on regrettera un menu un peu hors de prix m\u00eame si la r\u00e9putation de la maison et le professionnalisme de son personnel justifient cette inflation.<\/div>\n<div><\/div>\n<div>Comptez 50 dollars pour deux personnes<\/div>\n<div><\/div>\n<div>Adresse:\u00a0Barumbu<br \/>\n406A, Avenue du Progr\u00e8s<br \/>\nQuartier Bon March\u00e9.
